Berry and Pecan Spring Salad

This Berry and Pecan Spring Mix Salad is loaded with berries, avocado, pecans, and goat cheese.

Salad Ingredients:

  • 2-4 cups romaine spring mix
  • 2-4 cups spinach
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • ¼ cup pecan halves
  • ½ cup chickpeas {garbanzo beans}
  • ½ avocado,cubed
  • 4 slices deli turkey, chopped
  • 2 oz goat cheese


  1. Layer all ingredients in large bowls or plates, dividing the items evenly, then drizzle with Blueberry Pecan Balsamic Vinaigrette or dressing of choice!

Dressing Ingredients:

  • ½ cup blueberries (fresh or thawed)
  • 2 tbsp pecan halves
  • 1 tbsp roasted walnut oil (sub. with olive oil if needed)
  • 1 tbsp red apple balsamic vinegar (or other fruit flavored balsamic vinegar)
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • ¼ cup water
  • 1 ounce feta cheese (add more for extra creaminess)
  • The juice of one lemon


  1. Add all ingredients to food processor or blender, then blend until mix has a smooth, creamy consistency
  2. Dressing can be stored in your refrigerator up to one week.
  3. ENJOY!
